5:30 a.m. — The Kitchen, the Vehicle, the Road

Tuesday, July 14 began the same way every other Tuesday begins: the kitchen was lit before sunrise, food was cooked fresh in batches, packed into hot containers, drinking water was filled, plates and spoons were loaded. By 6:30 a.m. the team vehicle was on the road, heading towards the familiar coolie adda stops and roadside gathering points we visit every week.
